TILAPIA WITH PARSLEY AND OIL

Tilapia has become a very popular fish, and with good reason - it's mild, tasty and clean from metal contamination. This recipe is flavorful, yet subtle enough to not overwhelm the fish. It's also a great dish to make if you feel like eating fine food but are too lazy to spend much time making it.

 

INGREDIENTS

* Extra Virgin Olive Oil
* Fillets of Tilapia (fresh or frozen)
* 1 Small Clove of Garlic (optional)
* Sprigs of Parsley
* Salt & Pepper
* Red Pepper Flakes


The only preparation involved with this dish is the chopping of the parsley and the garlic, if you decide to use garlic.

Basically, we are going to cook the fish in water (and oil) with a frying pan.

Over medium heat, cover the bottom of a skillet with some extra virgin olive oil. If you are using garlic, sautee it in the oil.

Add water to the pan. Add about twice as much water as there is oil. Place fillets in the pan. Add salt, pepper and a conservative amount of red pepper flakes. Cover the pan. Cooking time depends upon how thick your fillets are.

Turn the fish over and cook on the other side, then add the chopped parsley. Cover again.
