ITALIAN CAULIFLOWER SOUP

This is another one of the easier dishes that I've posted to my list of recipes of the month. It is a refreshing and nice soup for the summer - healthy and very delicious.

 

INGREDIENTS

* 1 Head of Cauliflower
* Thin spaghetti
* Olive oil
* 2 Cloves of garlic
* Romano cheese

Cover the bottom of a fairly large soup pot liberally with olive oil.
Slice the garlic and fry in the oil. The oil shouldn't be real hot because the garlic will burn and get bitter (wouldn't you?).
Add water into the pot so that you can cook the cauliflower in it. As the water is heating, cut the head of cauliflower into small wedges. Drop in the water and cook until done.
Cook some pasta (about 1/2 box) separately. When the spaghetti is done, drain it and add to the mixture.
Sprinkle with Romano cheese.
