ITALIAN FRIED CAULIFLOWER
(Side Dish)

These things are simply irresistible - there are no two ways about it. Even if you don't like cauliflower, you won't be able to stop eating these rich little morsels.

 

INGREDIENTS

* 1 head of cauliflower
* 3 eggs
* Italian bread crumbs
* Fresh chopped parsley
* Grated Romano cheese
* Olive oil

The cauliflower has to be sectioned and cooked before you can start on this dish. Either steam it, or boil it, but make sure it's well done.
Next, spread your bread crumbs on a plate and mix them with about 70% Romano cheese. You don't even really need the bread crumbs, you can just use cheese if you like, but no matter what you do, be sure to add the chopped parsley to this mixture.
Cover the bottom of a large skillet with a liberal amount of olive oil, and keep at a low to medium temperature.
Mix 2 eggs together in a bowl and then add just the yolk of the 3rd egg - scramble them together.
Now the assembly line is ready for production.
Dip the sections of cauliflower in the egg and roll them in the mixture of cheese and crumbs. Lay each one in the skillet, and make sure the heat is not too hot because the cheese will burn easily.
